Do You Stuff Your Potato?

Baked potatoes don’t have to be your basic potato with some butter and sour cream.  You can stuff your potato, and that will take that dinner side into a good meal choice for each at the table.

Potato Power
Have some swap action and instead of using the white potato or yellow potato, use a beautiful orange sweet potato. Making the switch will give you increased Vitamin A, potassium, and more fiber also.  The skin of the sweet potato is what gives you a good jolt of Vitamin A, so no peeling these spuds.

Stuff it
There are many ways to stuff a potato. In fact, the sky’s the limit. There is no need to limit stuffing to broccoli and cheese, which is a good choice, but nothing new.

You have choices. Try adding these ingredients to your baked potatoes.

  • Ham & Egg
    Add ¼ cup cubed ham and 1 fried egg, and drizzle with maple syrup for a twist. Yum!
  • Apple & Turkey Bacon
    This time dice ½ a medium apple and add 2 tablespoons blue cheese dressing and 2 slices turkey bacon, crumbled. Interesting!
  • Pizza
    Use 2 tablespoons of tomato sauce, 1/8 cup of shredded mozzarella cheese, and a few pieces of pepperoni for some pizza fun!
  • Curry & Peanuts
    Now try 3 tablespoons curry sauce, ¼ cup crushed peanuts, with 1 tablespoon of cilantro can make a great meal.

You can be as inventive as you want with this. Imagine the possibilities and discover new tastes. Stuff that spud for some delicious, healthy meals for the whole family.
